Start about 5 1/2 hours before you want to serve it. Bake at 350 degrees on a rack in a pan. At about 3 1/2 hours you can take out the bag with all the "extras" in it. Start checking at 4 1/2 hours. Remove at about 165 degrees. Let rest for at least 15 minutes before carving.
