This one of my favorite recipes. I got it out of a newspaper a few years back.
Open Plum Kuchen 1 1/2 cups fllour 1/4 teasp sugar 1/2 teasp salt 1/2 cup butter or margarine 1 egg yolk 2 tablespoons milk 1/4 cup cracker or corn flakes crumbs 4 cups halved, pitted plums 1 tablespoon lemon juice 1/2 cup sugar 1 teasp cinnamon 1 tablespoon butter Combine unsifted flour, sugar and salt in bowl; cut in fat. Beat egg yolk and milk lightly; blend into flour mix. Press to bottom and sides of 8" square pan ( or pie dish). Sprinkle crumbs over dough. Toss plums with lemon juice; press into dough. Sprinkle with sugar and cinnamon mixture; dot with butter. Bake at 375 degrees about 45 minutes, until crust browns and fruit is tender. Cool before serving. Makes 12 servings. |
