I posted this on Village Green... but wanted to be sure y'all saw it.
Just got this in an email... It is FANTASTIC!! Feel free to copy this and pass it along. I don't even know the woman who sent it to me. I told her that I'm not the person she thought it was, and she emailed back that if I didn't mind she'd keep me on her list. I said it was fine. She's not offensive or anything. I only replied the first time because I wanted her to know that her intended target wasn't getting the emails. I'm glad that she kept me on! This is just too good.
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons cake flour(that's plain flour, not self-rising) 4 tablespoons sugar 2 tablespoons baking cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips(optional) a small splash of vanilla essence 1 coffee mug
Add dry ingredients to mug, and mix well Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla essence, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous). And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

You may have to up the sugar by a tablespoon. My daughter wanted it sweeter.

This would be a good recipe for cake when it's too hot to bake.
(there's a thread on "heat wave foods" over in the Foods section where this would work nicely)
